The labour figure is one hotel's result, published in the Thistle Hotel case study, where bar staff took over food service from 1pm with no chef on site. It is not a sector average, and a hotel that keeps a full restaurant brigade will see a smaller change.

The figures exclude pension, holiday cover, agency cover for sickness, and the cost of recruiting. The National Living Wage is £12.71 an hour from April 2026, which sets the floor for kitchen porters and junior staff.

- Statutory rates are from GOV.UK: employer National Insurance rates and thresholds and the National Living Wage.
- Employer NI amounts are our calculation: salary minus the £5,000 threshold, multiplied by 15%.
- What changed in version 2: the hotel table no longer states a staffing ratio or a general labour-saving range, which came from our workplace canteen analysis and do not apply to hotels. Statutory rates are now sourced from GOV.UK.
