What food options work for a hotel that currently only serves breakfast?
There are five, and they differ mainly in who does the cooking. You can send guests elsewhere, put in vending, partner with a local restaurant, build a kitchen and hire a chef, or serve chef-made dishes that your own front-of-house team finishes to order. For most breakfast-only hotels the last is the only one that adds a real evening menu without adding a kitchen team.

How does a breakfast-only hotel add dinner without a kitchen team?
The dishes are cooked by Nova Chef’s chefs in our London kitchen and delivered ready to finish. Your receptionist, bar team or night porter scans the barcode on the pack, the scan-to-cook station sets the microwave or the air fryer, and the dish is plated in minutes. Nothing raw is prepared on site, so the breakfast room, the bar or the lobby becomes the service point.
A real evening menu
Burgers and chips, curries, pasta, sous-vide beef and lamb, glazed salmon. More than 80 dishes are programmed, so you can start short and extend.
The team you have
No chef to hire and no rota to build around one. Whoever is on shift serves it, and a new starter can serve the full menu on day one.
Room service included
The same scan serves a tray to a room at any hour. Late arrivals eat in the hotel instead of ordering in.
Is it worth it for a small hotel?
The sums are simpler than a kitchen’s because there is almost no fixed cost. Food is about £3.10 to £4.50 per cover, there is no chef on the payroll, and dishes keep for twelve months, so an empty Tuesday costs you nothing. A 136-room Holiday Inn Express in London used the same model to add event catering without hiring chefs, and Hilton uses it for night room service.
