Ready Meals for Pubs Without a Chef: Costs, Suppliers and How It Works

The short answer. Ready meals for pubs are chef-made dishes cooked and blast-frozen in a production kitchen, then finished behind the bar by whoever is on shift: 3–10 minutes in a combi oven, air fryer or microwave, no chef. Food cost is £3 to £6.50 a portion, ex VAT, with no management fee or long contract. Nova Chef's pub range of 80+ dishes is developed by Culinary Director Sergey Men, a Michelin-Guide restaurateur, made in a SALSA-certified kitchen in London, and already runs the food in 60 UK hotels and their bars.
Who it suits: wet-led pubs that want food without a kitchen team, pubs that have lost their chef, inns with rooms that need evening meals for guests, and any pub whose covers swing from a packed Sunday to two on a wet Tuesday. Read on for how it works, what it costs, who supplies it, and what operators report.

Why pubs are looking at ready meals in the first place
A pub kitchen is one of the hardest things in hospitality to make pay. Trade is lumpy: the kitchen that is flat out on a Sunday is paying a chef to stand still on Tuesday. Chefs are hard to find, harder to keep and expensive to cover when they are off. And when the kitchen closes, the group that would have stayed for food and another round walks to the pub down the road.
The usual answers all have a catch. A full-time chef is a fixed cost whatever the covers. An agency chef costs more per hour and cooks a different menu every week. Dropping food altogether keeps the wet margin but loses the dwell time and the Sunday trade. Chef-made dishes finished by the bar team are the fourth option: a proper menu every service, cooked to order, and nothing binned when it is quiet.
What "ready meals for pubs" actually means
Not the supermarket kind. The dishes are cooked by chefs in a production kitchen, portioned, and blast-frozen at the point they would normally be plated. Freezing is the preservation method: there are no preservatives, and the frozen packs keep for up to 12 months, so the pub holds its whole menu in a freezer and cooks only what is ordered.
The difference from a retail ready meal is that everything is built for trade service. Portions are sized for a pub plate, packs carry the finishing instructions and allergen data, and the range is designed so a bar person can finish a slow-cooked lamb shank or a burger and chips to the same standard every time, in the equipment a pub already has.
How a pub serves hot food with no chef
- Store: the dishes arrive frozen and go straight into a freezer behind or near the bar. No prep, no mise en place, no chef on the rota.
- Scan and heat: when an order comes in, the bar person scans the barcode on the pack. The Scan-to-Cook Station programs the combi oven, air fryer or microwave and runs the right setting. Burgers and crispy chicken strips take 3–5 minutes in the air fryer; slow-cooked mains such as featherblade beef and lamb shank are finished in the combi oven in under 10.
- Serve: plate, garnish and send it out. Whoever is behind the bar can do this after one training session, and the dish comes out the same whoever is on shift.
Pubs that already run a combi oven and an air fryer do not need the station: every pack carries the finishing instructions. The station removes the judgement, which is what makes it work on a Saturday night with a new starter behind the bar.
What it costs a pub
| Per portion, bar menu | Nova Chef pub range |
|---|---|
| Food cost per portion | £3 to £6.50, ex VAT, depending on the dish |
| Management fee or service charge | None |
| Contract | No long contract; order as needed |
| Minimum order | From £500, delivered frozen |
| Delivery | Anywhere in mainland UK, usually within 3–5 working days |
| Kitchen staff needed | None; the bar team finishes the dishes |
| Equipment | Your own combi oven, air fryer or microwave; Scan-to-Cook Station to buy or hire |
A worked example: a dish that costs £4.50 to buy and sells at £13.50 including VAT brings in £11.25 ex VAT, a gross profit of £6.75 or 60%, with no kitchen wage behind it. The same plate from a pub kitchen carries the chef's hours whether it sells two portions or forty. Food cost per portion is higher than cooking from raw ingredients; total cost of the plate, once labour and waste are counted, is usually lower. Who supplies ready meals to pubs in the UK, and which type you need
Three kinds of supplier answer this search, and they solve different problems:
- Pub and hospitality specialists (Nova Chef): chef-developed dishes built for bar menus, functions and inns with rooms, finished on site by non-chef staff with barcode-programmed equipment, with menu development, finishing instructions and allergen documentation included. Choose this if the problem is the chef you cannot hire, or a kitchen that does not pay on quiet days.
- Broadline wholesalers (Brakes, Bidfood, Booker): ingredients and some chilled, ambient and frozen lines, delivered nationally. Choose this if you have a kitchen team and the problem is range or price.
- Consumer and artisan brands (COOK, supermarket ranges): good retail ready meals in retail packs at retail prices, heated in a domestic oven. Fine for a village pub doing six covers a week; not built for trade margins, portion control or a 40-cover Sunday.
Many pubs end up with the first and the second: the wholesaler for crisps, snacks and store-cupboard lines, the specialist for the plates that would otherwise need a chef.
What operators running food this way report
The best-documented example is a bar. The Marlin Hotel's Chaplin Bar in London was drinks-only with little food. After moving to a Nova Chef menu finished by the bar team, with no kitchen staff hired, monthly bar sales tripled, from about £4,000 to £12,000. At Thistle hotels the kitchen team now works breakfast to 1pm and Nova Chef covers everything after that, including the bar; one hotel's result was kitchen labour down 50%.
Among pubs and inns, the Crown & Cushion Hotel, a coaching inn, runs its bar and restaurant food on the same range, and the same dishes are finished every day by non-chef staff in hotel bars, golf clubhouse bars and sports clubs across the UK. The quickest way to judge it against your own kitchen is a free tasting at your pub: your bar team cooks it, you taste it.
Functions, wakes and match days
Pub food is two jobs. The bar menu is individual portions cooked to order: burgers, chicken strips and arancini as the orders come in on a match day or quiz night, so nothing sits under a heat lamp and nothing is thrown away. Functions are the other job: catering packs serving 6–7 people a tray, planned to headcount, ready in 20–40 minutes in a combi oven straight from frozen. A wake for 40 is six or seven trays and one person who can read a barcode. The same freezer holds both.
When this is not the answer
A food-led pub with a strong chef, a full dining room and a menu that is the reason people drive to it should keep its kitchen; chef-made supply there is a back-up for days off and the odd dish that is not worth prepping, not a replacement. The model fits best where food is a service to the wet trade and the rooms, where a chef cannot be found or does not pay, and where the owner wants the menu to come out the same whoever is on shift.
FAQs
Can a pub serve hot food without a chef?
Yes. Chef-made dishes are cooked and blast-frozen in a production kitchen, then finished behind the bar in a combi oven, air fryer or microwave in 3–10 minutes. Whoever is on shift scans the barcode on the pack and the Scan-to-Cook Station programs the appliance, so no cooking skill is needed. One training session is enough.
How much do ready meals for pubs cost?
Nova Chef's pub range is £3 to £6.50 a portion, ex VAT, depending on the dish. There is no management fee, service charge or long contract. Orders start at £500 and are delivered frozen anywhere in mainland UK, usually within 3–5 working days.
Who supplies ready meals to pubs in the UK?
Three kinds of supplier. Pub and hospitality specialists such as Nova Chef supply chef-developed dishes finished by bar staff with barcode-programmed equipment, menu development and allergen documentation included. Broadline wholesalers such as Brakes, Bidfood and Booker supply ingredients and some frozen lines to pubs that still have a kitchen team. Retail brands such as COOK sell consumer ready meals at retail prices, which rarely work for trade margins or volume.
Do we need special equipment?
No. Every dish works in the combi oven, air fryer or microwave the pub already has, and each pack carries the finishing instructions. The Scan-to-Cook Station, to buy or hire, makes it foolproof: staff scan the pack and the station runs the right setting.
What is on a no-chef pub menu?
Pub favourites from a range of 80+ chef-made dishes: beef and chicken burgers with chips, crispy chicken strips, spinach and mozzarella arancini, sous-vide featherblade beef and whole lamb shank, plus curries, pasta and vegan mains. Nova Chef builds the menu around the pub's trade, space and busiest nights.
Can ready meals cover functions, wakes and match days?
Yes. Catering packs serve 6–7 people a tray and take 20–40 minutes in a combi oven straight from frozen, so a wake for 40 is six or seven trays planned to headcount. Individual portions are cooked to order as the bar fills on match days and quiz nights, so nothing sits under a heat lamp.
How is the food waste so low?
Dishes are cooked only when ordered and the rest stays frozen for up to 12 months, so a quiet Tuesday costs nothing in binned prep. Catering packs for functions are planned to headcount.
Who makes the food?
Nova Chef's dishes are developed by Culinary Director Sergey Men, a Michelin-Guide restaurateur, and made in the company's SALSA-certified production kitchen in North West London. The same range runs in 60 UK hotels, including Hilton, Marriott, IHG and Radisson Individuals properties.
